紅蘿蔔蛋糕之所以會盛行於英國,是因為二次世界大戰時實施食物配給制度,
含糖量高的紅蘿蔔再次受到大家重視,也是這個原因紅蘿蔔蛋糕才得以流傳至今,更成為英國家庭必備的基本甜點。

經高溫烘烤後,紅蘿蔔原有的氣味消散的幾乎感覺不出,反而轉化成了軟糯清爽的口感,
再加入肉桂和香草莢起司餡調味,使蛋糕的味道更加豐富,外層再鋪滿烤過的香脆胡桃粒,以太妃醬做最終點綴
